Here at our Amber Restaurant, we are proud to serve our customers dishes created using Scottish produce with the freshest of ingredients from the length and breadth of Scotland.

This year, Scotland’s food and drink celebrations have been extended to a whole month as we enjoy Scottish Food & Drink September. Throughout the month, we will be putting a spotlight on some of the brilliant producers we work with and showcasing the final dishes our team of chefs put together using their ingredients.  Since 2001, we have been working closely with local suppliers to bring our customers the best from our rivers and seas, mountains and glens, fields and pastures. Great Glen Charcuterie Platter

Great Glen Charcuterie - venison salami

Pictured here is our meat platter. Served at lunchtime, this is the perfect sharing platter to enjoy with a dram, or glass of wine. Included in the platter is Great Glen venison salami from the Great Glen Charcuterie in Roy Bridge, a family run business deep in the Scottish Highlands. Their venison is sourced from wild-roaming deer, grazing on heather, wild plants and grasses.

Our seared king scallops with Stornoway Black Pudding, pea purée and green oil is delicious! Charles Macleod Stornoway Black Pudding is a world-renowned delicacy and has been made in the Outer Hebrides for hundreds of years on the crofts.

Campbells Prime Meat - haggis

Our traditional haggis with neeps and tatties with a whisky sauce is a firm favourite in Amber. From family run, Campbells Prime Meat based in Linlithgow, Campbells has been in business for over 100 years and their founders passion for Scottish produce drives the team and lives on today.

Amber’s customers enjoy a sharing cheese platter, which we can pair with a dram or two! Many of our customers are surprised to learn that only Scottish cheeses are served, these include Clava Brie from Connage Highland Dairy in Ardersier, and blue cheese from Highland Fine Cheeses in Tain. Delicious!

The Breadwinner Bakery - bread

The Breadwinner bakery has been lovingly crafting bread since 1973, using simple, traditional methods to supply freshly baked goods. The bread we serve with our soup and our delicious sandwiches comes from Breadwinner, based locally in Edinburgh.

Pittormie Farm - raspberries

Here we have our raspberry cranachan slice with raspberry coulis and shortbread. With raspberries from the small family-run farm in the heart of North East Fife, Pittormie supplies us with the freshest fruit and vegetables and superb eggs all year round.

And finally, with all this talk of delicious Scottish food, we mustn’t forget our Scotch whisky! Every month we feature a special themed selection of ‘Whiskies of the Month.’ To celebrate #ScotFoodDrinkSept24 we asked our Senior Tours and Tastings Manager, Lenka Whyles, to suggest a perfect food pairing for each whisky with a dish from our menu.

September's Whiskies of the Month and their food matches

Lowland single malt, Glenkinchie 12 year old paired with Bonnet goats cheese and leek pannacotta with beetroot salad. The light character and sweet flowery notes in the whisky goes well with this delicate starter.

Highland single malt, Highland Park 12 year old paired with citrus, honey and whisky cured salmon and soda bread crostini. The whisky has soft heather honey notes which combine well with the sweetness of salmon on soda bread.

Speyside single malt, Glenfiddich 18 year old paired with dark chocolate tart with caramelised mascarpone cream and summer berries. The whisky’s fruity character and its depth of flavour from the extended maturation process will be a match made in heaven with our dark chocolate tart.

Campbeltown single malt, Glen Scotia Double Cask Rum finish paired with sticky toffee pudding with vanilla ice cream. This matches perfectly because the dates and molasses in the flavour profile of this whisky is enhanced by the warmth of the toffee and vanilla.

Islay single malt, Lagavulin 16 year old paired with grilled pear and Blue murder cheese salad with garlic croutons and honey vinaigrette. Smoky whisky and cheese is one of the best flavour combinations and this cheese has a murder in its name!

Our Blended whisky this month is Dewars 12 year old. Paired with our meat platter, the spiciness of the whisky cuts through the meaty flavours and combine into a satisfying warming finish.
